Well hi! I hope you all had a delightful weekend? I most definitely did! A whole lot of miles were driven this weekend (all the way to Kent, plus a jaunt to Richmond too), my Mum and I spent a day in the glorious sunshine at the Wealden Midsummer fair, I had my first ever trip to Whole Foods (completely awesome!) and we also made a little stop by Hummingbird to pick up Red Velvets. Photos will be coming your way in the next couple of days (of course, this is a blog after all!) but until then, let’s start this week with new resolve, and good intentions, and some really great breakfast, shall we? :)

1. Soft boiled eggs with bacon-wrapped asparagus (beautiful enough to serve as a starter at a dinner party with friends).

2. Frittata with baby tomatoes, whipped goats cheese and fresh thyme (a make-ahead breakfast, for eating on the go).

3. Poached eggs (with the most gorgeous golden yolks!), with roasted Anaheim peppers + tomatoes (perfect for a leisurely weekend brunch).

4. Scrambled eggs on spelt toast, with caramelised baby tomatoes (for providing energy through long working days).

    Oh my goodness, your life! It’s perfection to me! I come from Kent so am quite jealous of your trip to the Wealden Midsummer fair…and the red velvet cake from Hummingbird (my favourite)…and the egg recipes! Asparagus, goats cheese, peppers & caremalised tomatoes…I need all of these for Brunch which is, of course, my favourite meal of the day.

    You just can’t go wrong with eggs especially for breakfast. The oozy yolk pics are so bright and yellow.Delicious.

    I tried making poached eggs once and it just went horrifically! I always just go for the standard dippy egg and soldier because they’re awesome. x

    These all look amazing! I’m particularly taken by the bacon-wrapped asparagus with the soft-boiled eggs, and may have to try that for myself at the weekend.

    I’ve recently found out that I’ve got a Vitamin D deficiency and this has possibly not helped my post-pneumonia hair loss. (Not nice!) I now need to eat more eggs so this post has given me lots of exciting ideas. Thanks for sharing! x
