{Four} hearty vegetable dishes, for midweek suppers + weekend lunches.



1. Parsnip, gruyere + thyme gratin (to be roasted until bubbling, and served alongside a garlicky roasted chicken.)

2. Spicy potato + tarragon soup (for warming post-walk Sunday lunches)

3. Courgette koftas in coconut tomato sauce (best eaten with fluffy rice + soft flatbreads)

4. Kale + chickpea soup with rosemary croutons (double-up on ingredients + stash the leftovers)
