    Quinoa with cheese is the bomb. I made a tomato, cheese and basil quinoa bake that I found on Pinterest recently and it felt both indulgent and virtuous – total winner.

    I love quinoa but I have never yet managed to cook it properly…it always clags together rather than being the beautiful separate grains that you see in photographs.

    My favourite thing to do is roast veggies (peppers, onions, butternut squash) and fold them into the quinoa with crumbled feta. Fantastic over salad leaves for lunch with some toasted almonds on top!

    I adore quinoa! Its such a lovely thing to mix into salads or serve as an alternative to carb-heavy bits and bobs as it doesnt leave you feeling too full and sluggish and generally YACK! We had it along-side griddled chicken the other night. We made a little ‘what’s left in fridge’ type of salad and mixed watercress, chickpeas, coriander, a squeeze of lemon juice and toasted sunflower seeds in with it and it was YUM. I could have eaten it completely by itself for lunch the next day had there been any left. But of course living with a man means there is rarely ever anything left! xxxxx
