This week’s resolution is another food-related one! Last week Jason mentioned that he’d like to lose some weight and get fitter, and so I promised that I’d work on making the meals we eat during the week ahead healthier and cleaner.

I got started on our healthy-eating resolution over the weekend, and have to admit that the first meal I cooked and served up to Jase was a failure of epic proportions! It was roasted garlic mushrooms, giant couscous with courgettes, and a salad of lettuce, carrots and red cabbage. Jase tried hard to feign enthusiasm for it, but eventually his hatred for salad & couscous won out. He looked so miserable, I took pity and made him a sandwich to eat instead.

Jason’s thoughts on the dish? Direct quote…’It was horrible.’ ;)

Looks like I’m going to have to get creative to stick to this resolution! Here’s what’s on our new, healthier meal plan for the week ahead…

Tom Kha Gai (Thai coconut chicken soup)
Homemade pasta with a roasted red pepper sauce
Turkey meatballs with a spicy tomato sauce & pasta
Roasted butternut squash soup
Strip steak (one steak shared between us both) served with sticky rice, pak choi & sesame seeds

I’m also going to make a batch of Deb’s famous granola bars for us to snack on during the week, and have bought plenty of fruit and natural yoghurt for our breakfasts.

    Always resolved to eat well :) It makes such a difference to how I feel, never mind look. That Thai soup looks gorgeous- we tend to eat a ton of homemade spicy soups and stir frys. Yum!     I am! I did one last week, which I did okay at. This week I’ve got two easy domestic ones:
    1) Water the hanging basket out front every day – I’m trying really hard not to kill it.
    2) Dust everything in my house in the course of the week, that my Mum would dust. That is a lot of dusting…

    PS lean supper I like is the Parma Ham, Pear, Walnut & (just a sprinkle) Blue cheese salad that you can get in Jamie’s Italian. Also pleases me for an after work supper because it’s just an assembly job…

    That sounds like a pretty good menu! It’s so hard to come up with different healthy meals, we tend to get stuck in a rut and eat the same things. Good luck in your endeavours I hope you will share your successes with us :)

    Me and my other half have been vowing to eat more healthily for ages now and after our recent holiday of eating far too much, we are now trying it full pelt. Your menu sounds lovely, I tbi k I may steal some of your recipes ;)
    I also made some healthy muesli bars to curb our sweet cravings.
    No other resolutions for me this week, just try and stick to our menus and not get tempted by the convenience of Chinese!!!

    Your first meal sounds amazing! I can’t believe he complained after you went to all that effort. Get him into the kitchen as your next week’ resolution!

      I’ll be honest, it wasn’t the best meal I’ve cooked! ;) Jase did say he felt dreadful for not liking it after I’d gone to so much trouble. I’m more than happy to do all the cooking, I enjoy it so much!

    I love Vicki’s food posts! Her food looks so good! I have no resolutions this week except to try and avoid spending money on lunches. They cost a small fortune and preparing at home is so much cheaper and nicer! Good luck with your new meals xx

    Butternut squash soup is my favorite. Way to go on being more conscious of making healthy meals. It is definitely not easy to start out but turns into a habit quickly.

    Yay for healthy eating! Although, it’s definitely hard to find good recipes sometimes :) Especially cooking for two. I think the Thai coconut chicken soup will be a better success! Crossing my fingers for ya ;)

    I’m so jealous that your boyfriend wants you two to eat healthier! I’m always trying to eat as healthy as possible, but my boyfriend thinks I’m just overdoing it… (he’s probably right, but it’d be easy, if he wanted to more as well). But I don’t want to complain, I guess we balance each other out.     My resolution for this week is to stop making a big deal out of everything and to be more rational ;)
