this pasta is great. there’s no two ways about it. it’s healthy, filling, meat-free (so totally budget friendly) and it has toasted pine nuts in it. and since i just can’t get enough of those little babies at the moment, this dish is absolutely my favourite thing to eat of late. 
ingredients:
fusilli pasta (any shape is fine, but the sauce clings well to fusilli so i would recommend it!)
one head of broccoli
one heaped tablespoon of creme fraiche
one handful of pine nuts, toasted
some grated parmesan, or strong cheddar cheese
seasoning
1. chop up the broccoli into fairly small chunks, about 1inch across. the stalk is perfectly fine to eat too, just cut it into slightly smaller pieces!
2. put your pasta on to boil in well salted water. after it’s been cooking for a couple of minutes, add in the broccoli. whilst they’re boiling, toast the pine nuts in a dry pan for a few minutes, until they’re golden brown. be careful though, because they turn from golden brown to black very quickly and continue to cook even when the heat’s been turned off under the pan!
3. when both the pasta and broccoli are tender, drain them in a colander. the broccoli needs to be slightly overdone so that it’s soft enough to form a sauce for the pasta.
4. return the pasta and broccoli to the pan, and stir through the creme fraiche, grated cheese, and pine nuts. stir the mixture quite vigorously, so the broccoli breaks down and coats the pasta.
5. taste, and season as you fancy.

below: this tuft of hair peeping eagerly over the back seats of the car makes me melt.

below: the woods were empty. because, you know, who else other than dog-owning newbies would venture out in weather like this? ;)

below: we layered up well, to keep out this unseasonable cold.

below: the snow was melting as quickly as it fell, and cut its way through the landscape in streams.


below: the wind kept my hair on a knife edge between tousled and matted all weekend…
below: teddy pranced about with a branch of fir, and was ever so proud of himself for finding it.

this handsome man of mine is taking a few days off over the coming week, and i’m pretty excited!
even though i’ve got essay after essay to write and not quite enough time to do them all,
it’ll be nice to have jase at home with me whilst i’m working.
because you know, i do love that man one heck of a lot…
and i especially love it when he’s around to take teddy off my hands for an hour or two each day, so i can essay-write without interruptions!
what with jason at home and all this snow, it’s like the christmas holidays have come all over again!

1. having the best nap ever after my last english and drama class performance on wednesday. as soon as it was done the exhaustion just washed over me like a wave, so i came home and slept for two hours straight. bliss!

2. playing dress-up with jase on tuesday night before bed. we were both kind of hysterical from tiredness, he put on one of my hats, looked like a dinner lady, and i laughed until i cried!

3. toasted pine nuts. i’m seriously addicted to them.

4. hearing from soldier joe, who returned back home from tour last night! we’re so happy he’s back safe and sound!

5. the lovely t shirts i’d been coveting in gap being reduced by more than fifty percent in a flash sale, and then arriving less than 24 hours after i ordered them! me and those tees were just meant to be. 

6. having teeny cans of pepsi max in the fridge. they taste like summer!

7. netflix. it lets me watch trashy films like superbad during my daily work outs, and that’s pretty awesome.

8. rediscovering my love for glade’s spiced apple candle!

9. having treacle pudding for dessert on thursday. it reminded me of school days :)

10. the face teddy makes when he’s crunching carrots. it always looks as though he’s wearing ill-fitting dentures, and it makes me laugh so much!
