1. finally having new floor in the kitchen and hall! it’s beautiful beautiful beautiful, and i’m so happy! and also, super impressed once again by jason’s diy-ing skills. that man is talented.

2. watching teddy slipping and sliding down the hall. sometimes he does cartoon running, where his legs are moving but he’s not actually going anywhere. it makes us laugh a lot!

3. looking forward to my birthday tomorrow! at times in the past week i’ve panicked about having to get through my first birthday without my grandma, but i’m determined to enjoy turning 22 as much as she’d want me to :)

4. working out each morning after ted and i get back from our walk. it feels so good to get my body moving again.

5. although having said that, having a big tin of celebrations in the house has made me a very happy girl indeed! milky way anyone? sorry, i ate them all.

6. ted’s shifty face when i caught him sleeping on the sofa last night!

7. bribing myself to crack on with essay writing. ‘just write 250 words, then you can make some christmas biscuits. just another 200, then a lovely hot bath.’ it works a treat!

8. having a make up free week. i can practically hear my skin saying ‘thank you!’

9. i never thought i’d say this, but i’m so happy, ecstatic even, to have our washing machine plumbed back in from this evening! it’s been sat in our living room all week so jase could put the new flooring down in the kitchen, and our laundry pile is threatening to take over our entire bedroom…

10. watching the sun rising in the mornings, when i’m out walking with teddy. such a lovely way to start each day.

this pie is good. really good. and it’s easy, which is almost as important! the quantities given here fit the pie dish pictured above, but the recipe can be sized up or down to fit any dish you might want to use. my recipe is based on jamie oliver’s leftover turkey and leek christmas pie, from his one of his heart-warming christmas specials :)
ingredients
a couple of rashers of smoked bacon
3 or 4 leeks
a couple of sprigs of thyme, or a bouquet garni
500g of chicken breast
a couple of tablespoons of plain flour
chicken stock
philadelphia or creme fraiche
one pack of premade all butter puff pastry
one egg

method:
1.  preheat your oven to 200 degrees celsius. chop up the bacon into fairly small pieces, add into a large frying pan with a drizzle of olive oil and cook on a medium heat.

2. chop the leeks into slim-ish rounds, then chuck into the pan with a large knob of butter when the bacon has just started to colour. add in your thyme sprigs or bouquet garni, too. cook the leeks slowly, on a low heat for about 15 minutes or so. if you’ve got a bottle of white wine open, add a splash to help the leeks steam and soften.

3. whilst the leeks are softening, cut up the chicken breasts into bitesize pieces. toss them in as much plain flour as it takes to give the chicken an even floury coating.

4. when the leeks are cooked, take them out of the pan (and fish out the thyme stalks/bouquet garni) and put the chicken in instead. cook the chicken on a medium heat until just cooked through. return the leeks to the pan, and stir to combine with the chicken.

5. pour in some chicken stock, just enough to barely cover the leek and chicken mixture. simmer the mixture until it’s until reduced and thickened. you’re looking for the liquid to reduce down into a rich gravy, and needs to be not too runny or it’ll make your pastry soggy.

6. when the pie filling is nice and thick, stir in a big dollop of cream cheese or creme fraiche. taste to check the seasoning, transfer to your pie dish, and set aside.

7. roll out the pastry on a well floured surface until it’s about 3 or 4mm thick. trim it roughly to the shape of your pie dish, and then transfer it onto the top of your mixture. tuck the pastry around the filling, score it lightly, and make a tiny hole in the middle to let out steam.

8. brush the pie with a little beaten egg to glaze, and then put in your preheated oven. the pie will need to cook for about half an hour, or until puffed up and golden brown on top.

and that’s it! this is one of my favourite favourite meals, so do let me know if you give it a go :)

because it’s diy-central in our house! also, can someone please remind jason and i that we should stop taking on huge diy projects when we have absurd time constraints? we once decided to repaint the hall, stairs and landing 48 hours before we had visitors coming to stay for the weekend. then there was the time last year we redid the kitchen and bathroom simultaneously, and left ourselves with no water or central heating for almost two weeks. and now, we’re laying new floor in the hall and kitchen a week before christmas, which has left the entire contents of the downstairs of our house crammed into our baby living room. 
teddy is less than impressed with the situation. see that face above? that’s his ‘you’ve moved my bed keep me awake late into the night banging and crashing and keep shouting at me for trying to eat sawdust so i’d better get some cheese out of this’ face. 
p.s. obviously when i say that ‘we’ are doing diy projects, i definitely mean jason. and when i say ‘we’ decide to start them at silly times, i definitely mean that i pester jase into starting, then realise the time constraints afterwards. he’s a patient man ;)

monday: pasta with spinach and pesto (and yup, those are a few random strands of linguine you can see. we didn’t have enough of a single type of pasta, so had what we call a ‘pasta mashup’! )
tuesday: homemade bacon and cheese burgers
wednesday: mushroom risotto
thursday: leek and bacon soup
my favourite?  risotto.  jason’s favourite?  burgers (of course!)  on the menu for the week ahead?  chicken goujons with roasted butternut squash, pork steaks with a creamy mustard sauce, and chicken and leek pie.
