today i’m sharing another of our all-time favourite family recipes! well, i’m using the term ‘family recipe’ loosely here, since whilst jason and i adore stilton my mama hates it so much that she actually makes a little ‘bleurgh’ noise whenever it’s mentioned, and my sis only really likes beige food ;) but either way, i love love love this soup because it’s both delicious and super easy to whip up. stilton is my absolute favourite cheese, so much so that it requires extreme willpower for me not to just eat it all whilst i’m cooking! here’s the recipe…
ingredients (serves 2):
1 large white onion
1 broccoli
bouillon/veg stock
100g stilton (my favourite is cropwell blue, available from waitrose)
salt and pepper
1. put the kettle on to boil, finely slice your onion and chunk up the broccoli.
2. cook the onion in a large saucepan with a pinch of salt and pepper until soft and translucent. when it’s cooked, add in your chopped broccoli.
3. make up enough stock to cover the broccoli in the pan. pour it into the saucepan and boil it until the broccoli is completely cooked (maybe about 5/10 minutes? i never really check the time, it’s easier just to poke a knife into the broccoli to see if it’s tender).
4. as i said before my blender is teeny tiny so i have to puree in batches, but i find it easiest to fish out the broccoli and onion with a slotted spoon and put it into the blender with a splash of stock, and then blend until smooth.
5. crumble about two thirds of the stilton into the blender, and blitz again until everything is smooth and amalgamated.
6. then pour the puree into a clean saucepan, and add in the remaining stock from the first pan ladleful at a time until the soup is at the consistency you like. taste to check the seasoning, and then serve with the remaining stilton crumbled over!
